Hey Adam - have you tried Permanent Publications in the UK? They are the book-publishing arm of UK's Permaculture Magazine and publish lots of great books in the agroecology sphere.
Are you familiar with Sul books? https://sulbooks.com/bookstore/print Rhyd Wildermuth, who writes a substack here called "From the Forests of Arduinna", is one of the main people behind this publisher. He is in Europe-I'm not sure if the entire operation is.
I'm not sure whether I've any skills to offer...though I have published five books of my own (and counting) so know my way around formatting and uploading to platforms and whatnot. Whatever I can do, I'll be glad to offer my services and to throw some dollars in the communal pot. I'm so looking forward to getting to read this.

What a wonder-full way to meet your Old Sally Moment! I will share this with someone I know who does editing...no direct contacts with European publishers, but I do live on the eastern side of the Atlantic pond. Can't wait to share Him :-)
